Curry!

I have made some curry today! I had a box of Golden Curry and instructions in English, so I tried to make some. I ignored the directions about meat because I wanted a plain curry. I substituted sweet potatoes instead of regular potatoes, because I was out, and chopped up some carrots. The curry was in squares that broke up into quarters. I chopped up some to help them integrate better into the water. After some stirring for five minutes, I pulled it off the heat. Ta da! Curry! It made a lot.

I ate it over some ramen noodles made without the seasoning packet. It was delicious. Not bad for a first try. And I have lots left for later. I'll put it up after it cools some more.

Carrots + sweet potatoes is my favorite way to make it! (When we're really lazy, it's just a can of beans + curry block and rice.)

I have messed with curry recipes for awhile now and, after many attempts, this is what I've come up with:
Sautée about 2-3 cloves chopped garlic and 1 medium coarse chopped onions in about a tablespoon of olive oil in a big pan until fragrant.
Then, if you want, add about a pound of meat, whatever your pleasure, cut into 1 inch squares. When the meat is no longer pink, add about 1 cup water or chicken broth (to just cover), cover with a lid and bring to a boil.
Add 2 to 3 medium potatoes cubed and carrots (I usually use about 1/2 to 2/3 a bag of baby carrots). If you just want veggie curry, skip the meat and just add veggies with about a cup of liquid. Cover and stir occationally until potatoes are fork tender.
Meanwhile, break up the curry roux, add to a microwave safe container and microwave with about 1/2cup of liquid for about a minute. Stir the roux until dissolved and pour into the pan. Stir in and boil down until it's as thick as desired. Add salt, pepper and garlic powder to taste.
